I-Pickles: Yenza ukudla kunambitheke

Nakuba ama-pickles kuyinto ejwayelekile kuzozonke izinhlanga ekusetshenzisweni ukwenza ukudla kunambitheke, umlando wama-pickles uvela eNdiya lapho ukhukhamba usikwa futhi agcinwe kwi-brine nesinongo futhi avutshelwe ukuze adliwe ukwenza ukudla kunambitheke. Kuthe uma kufika abazosebenza eThekwini bathwala lezo zithako ezijwayele ukwenza ama-prickles ukuze bawadle nokudla kwabo. Ama-pickle alula ukuwenza futhi ayathengeka. Asebenza njengesidlo esiyinongo esengeza ukunambitheka ekudleni. AmaNdiya aseThekwini azenzela uma-pickles emakhaya noma ewathenga esemabhodleleni ezitolo. Ama-pickle nawo avame ukutholakala emithandazweni nasemishadweni yamaNdiya. Izinhlobo ezijwayeleke kakhulu zama-pickles umango, imifino exutshwe (mixed vegetable), ukherothi, i-lime, iminti kanye nopelepele oluhlaza. Ama-prickles aziwa kakhulu ngokuthi i-atchar eThekwini.

Iresiphi enoshukena nemuncwana yama-Prickle kaMango

Izithako

  • 10 umango oluhlaza, osikiwe ube yikota
  • 7-8 upelepele oluhlaza oqoshiwe
  • U-100g we-pickle masala
  • ½ isipuni se-turmeric powder
  • 3 wezipuni ze-chilli powder
  • 2 wezipuni ushukela
  • Ingcosana kasawoti omahhadla ukunambitheka
  • 1 ithisipuni i-cumin kanye ne-coriander powder
  • 5 ama-clove amakhulu kagalikhi asikiwe
  • 1½ wezipuni ze-ginger echotshoziwe kanye ne-garlic paste
  • ½ ibhodlela likaviniga

Indlela yokwenza

Hlanganisa umango kanye nosawoti oqinile ndawonye futhi uvumele usawoti ukuthi uhlakazeke ngokuphelele. Beka umango ephepheni elimuncayo bese uvumela umango ukuthi wome elangeni izinsuku ezi-2. Lokhu kuvumela noma imuphi umswakama owedlulele ukuba uphume. Umango kufanele ubonakale womile futhi ushwbane kancane. Faka i-pickle masala, i-turmeric powder, i-chilli powder, ushukela, i-cumin ne-coriander powder kumango bese uhlanganisa kahle. Faka uviniga, izingcezu zikagalikhi, i-ginger kanye ne-garlic paste. Faka upelepele oluhlaza uhlanganise kahle.

I-pickle yemifino (yamaveji) ehlanganisiwe

Izithako

  • 5 ukherothi ohlutshiwe wasikwa waba isidukwana 
  • 5 upelepele oluhlaza oqoshwe waba amadayisi
  • ¼ yekholifulawa, esikwe yaba ama-florets
  • ¼ yeklabishi eqoshwe kahle
  • Iswayi ukuze kunambitheke
  • ½ ibhodlela likaviniga
  • U-100g  we-pickle masala
  • 5 wezipuni ze-chill powder
  • ½ ithisipuni ye-turmeric powder
  • 1 ithisipuni ye-cumin exutshwe ne-coriander powder nama-clove angu-6 kagalikhi ahlutshiwe futhi asiyiwe (sliced)

Indlela yokwenza

Endishini enkulu hlanganisa ukherothi , u-green beans, upelepele, iklabishi nokholifulawa. Faka uviniga uhlanganise kahle. Vumela lengxube (imifino) ukuba ingenwe uviniga ihora. Hlanganisa usawoti, i-pickle masala, i-chilli powder, i-turmeric powder, i-cumin kanye nezimpushana ye-coriander. Hlanganisa kahle i-pickle ukuze uqinisekise isikalo esilinganayo sezinongo, kuze kube yilapho imifino igcwele izinongo. Faka u-garlic osikiwe. Vumela i-pickle ime amahora ambalwa. Hlanganisa okokugqumisa bese ufaka kojeke noma emabhodleleni. Ama-pickle angagcinwa kuze kube yizinyanga ezi-3 efrijini.
